KETO Lemon Blueberry Muffins

These delicious muffins will please the crowd - the lemon zest and juice add a delicious zing and the fresh blueberries burst with flavor in this hard to believe it's Keto Recipe.

 

Blueberry Muffins

1½ cups KetoBakeMix ™

~⅓ cup monkfruit sweetener low glycemic sweetener of choice

1 tsp vanilla extract

1 tsp lemon zest

1 TBS lemon juice

1 cup of water

⅓ cup of fresh blueberries

 

Preheat the oven to 350°F. Whisk together KetoBakeMix, and monk fruit sweetener into a medium sized mixing bowl. Add water, vanilla, lemon zest, and lemon juice and stir until thoroughly mixed. Let stand for 5 minutes. Add Blueberries and mix until blended. Pour into 6 lightly greased muffin tin pan and bake for 18 - 23 minutes. Cool 5 minutes before enjoying. Makes 6 medium muffins or 12 mini muffins.
