Keto Pancakes & Waffles

 

1 cup KetoBakeMix ™

½ Cup of Water

2 tsp vanilla extract

½ tsp cinnamon (optional)

1 TBS monkfruit sweetener (blended with erythritol) or low glycemic index sweetener of choice

 

Mix KetoBakeMix and water into a medium sized bowl with a whisk. Let stand for 5 minutes. Pour into preheated waffle iron and cook according to waffle iron directions, or until the steam decreases. For pancakes heat a skillet to medium heat and cook and pour batter into skillet. Cook 2-3 minutes on each side.
