KETO Double Chocolate Muffins - 6g Net Carb per Muffin!

Double Chocolate Keto Muffins

1½ cups KetoBakeMix ™

⅓ cup monkfruit sweetener low glycemic sweetener of choice

1/3 cup of cocoa powder

1/4 tsp of cinnamon (optional)

1 tsp vanilla extract

1 cup of water

 

Preheat the oven to 350°F. Whisk together KetoBakeMix, cocoa powder, cinnamon, and monkfruit sweetener, or low-glycemic sweetener of your choice, into a medium sized mixing bowl. Add water and vanilla and stir until thoroughly mixed. Let stand for 5 minutes. Add Chocolate chips and mix until blended. Pour into greased muffin tin pan* and bake for 18 - 23 minutes. Cool 5 minutes before enjoying. Makes 6 medium muffins or 12 mini muffins.

 

*Note - I found that it is better not to use cupcake liners so the excess water escape.  Liners make a soggy muffin, as not enough moisture escapes.... :(
